Yellow-gold with attractive colorful highlights, Gala apple's pinkish-to-reddish-orange stripes are the usual identifying characteristics of this aromatic fruit that offers a juicy crunch and a sweet tangy flavor. Some Gala strains may be nearly solid red. This apple is considered to be one of the sweetest of all.

A superb dessert apple and excellent for fresh eating and baking, make pies, tarts, cobblers, sauces, cakes, quick breads, kuchen, cookies and muffins. Apple flavor and texture add dining pleasure in a variety of savory dishes. This attractive apple dresses up a fruit bowl centerpiece. Chilled slices make a perfect edible garnish. Sliced or cut apples stay white longer if put in a bowl of water containing two tablespoons of lemon juice. To store, keep apples as cold as possible in the refrigerator. This apple stores well.

Cortland

Cortland is a typical McIntosh style apple variety, and ranks about 12th in terms of US apple production.  However nearly all that production takes place in New York State, almost within sight of Cornell University where it was developed at the start of the 20th century.

Cortland is also widely grown across the border in Quebec and Ontario, and it has proven itself to be well-suited to the freezing temperatures experienced around the Great Lakes.

As with all McIntosh varieties, Cortland is at its best when eaten soon after being picked.

An interesting characteristic of Cortland is that the flesh does not go brown very rapidly after being cut.

The McIntosh apple was discovered here at Smyth’s Orchard.

The McIntosh style is typified by attractive dark red or (more often) crimson colours, and a crunchy bite, often with bright white flesh. The flavor is simple and direct, generally sweet but with refreshing acidity, and usually a hint of wine - often referred to as "vinous".  In general these apples keep reasonably well in store.

Honey Crisp

Honeycrisp, or Honey Crisp, is a modern apple variety, developed in the 1960s and introduced to the market in the 1990s - sometimes trademarked as Honeycrunch.

Honeycrisp is a medium-to-large sized apple, with a light green/yellow background largely covered with red-orange flush with strong hint of pink if grown in good sunlight. The skin may be flecked with occasional russet dots. The flesh is white, perhaps not quite as bright as a McIntosh style apple, but similarly crisp and not too dense.  The colour however can be quite variable.

The flavour is sweet with very little trace of acidity and little depth or complexity. There can also be a trace of pear-drop flavour. In a good example this is a juicy and instantly refreshing apple, in a less good example it will be simply sweet and bland (but still very nice).  As its name suggests this is genuinely a crisp / crunchy apple. However since the flesh is quite light, the crunch is surprisingly soft, nothing like the hard crisp crunch of a good Golden Delicious.

Ginger Gold

If the name Ginger Gold is unfamiliar, that's because it is a recent addition to the list of apple varieties. It was discovered growing among the twisted uprooted trees in a Virginia orchard in the foothills of the Blue Ridge Mountains. Its ancestors are the Golden Delicious and Albermarle Pippin apples.

Medium to large, reddish-bronze fruit has yellow, firm flesh with a rich, spicy flavor. Good for eating fresh or canning.

Usage: In salads and eaten raw by themselves or paired with cheese. Sweet juicy Anjous are perfect for baking into desserts like tarts.

The damson tree takes its name from the city of Damascus — in present-day Syria — where it was first cultivated many centuries ago. From here, damson tree cultivation spread to ancient Rome. The Romans subsequently introduced the tree to Great Britain, and British colonists in turn brought it to America.

The Damson plums make an excellent jam!

Paula Red apples were discovered around 1960 by grower Lewis Arends near a McIntosh block in his orchard in Sparta Township, Kent County, Michigan. He named the apple after his wife, Pauline.

Paula Red apples are bright red with some yellow and tan spots; the skin often has a dusty sheen. They have a sprightly taste, not too sweet and not too tart, vinous and slightly reminiscent of strawberries. It has a firm white flesh and are suitable for both eating fresh and cooking, although they become extremely soft when cooked, which suits them to some dishes (applesauce) and not others (pies).

Fruit is medium-sized and round with yellowish-white skin sometimes with a faint red blush. The firm, fine-grained white flesh is juicy and very sweet with a distinctive “sweet apple” flavour. Excellent for cider and drying, also a good desert and baking apple.

An early McIntosh type released by the New Jersey Agricultural Experiment Station in 1971, hence the name. This is one of the most successful results from a continuing effort to produce an apple with an earlier ripening date with similar qualities to the McIntosh.

Tart and tender it is an early favourite. Eating quality is quite good.

Jersey Mac is a good choice for McIntosh lovers who are getting impatient waiting for the Macs to ripen. With it’s medium size and beautiful appearance it has a lot of appeal to children making it another good choice for school lunches.

Attractive, high quality, yellow washed with crimson fruit. Very white, firm, crisp, sweet flesh. A sweet subacid flavour.

This apple was originally developed by J.E.L. Cripps of the Western Australian Department of Agriculture in the early 1980s. A cross between a Lady Williams and a Golden Delicious, Pink Lady™ is a registered trademark of the Australian Apple and Pear Growers Association, Inc.

Description/Taste
Very distinctive in flavour and colour, Pink Lady™ apples offer a delicious sweet-tart taste and a crisp slightly dry firm creamy-white flesh. This apple's tender skin has a pink to reddish-pink blush over a yellow background.

Applications
Pink Lady™ apples pair well with fresh strawberries, pineapple, kiwifruit and mango for refreshing fruit salad. Good for eating out of hand and cooking or baking, this grand apple makes tarts, pies, dumplings, cobblers, tortes and sauces. Sliced or cut apples stay white longer if put in a bowl of water with two tablespoons of lemon juice. To store, keep apples in the coldest part of the refrigerator. This apple freezes well.
